Flourless Chocolate Cake!

I'm on a diet, I need to fit in my wedding dress!
My nutricionist recommended me to eat berries everyday, because of the antioxidants.
Sooooo, I think this cake is a good way to have my berries today! ;)
I'm allowed to eat one portion of junk food once a week, so this week I'm eating a piece of this delicious cake!
And then, back on my diet!

I got this recipe here

300g/10½oz plain chocolate, broken into pieces
225g/8oz caster sugar (I used regular)
175ml/6fl oz boiling water
225g/8oz salted butter, cut into cubes, plus extra for greasing
6 free-range eggs, separated
1 tsp instant coffee powder
2 tsp vanilla extract

For the topping
200ml/7fl oz crème fraîche (I used chantilly)
255g/9oz summer berries
1 tbsp plain chocolate, grated (I didnt use)
Icing sugar, to dust

Preparation method
Preheat the oven to 180C/350F. Grease and line the base of a 23cm/9in springform tin with baking parchment. Blend the chocolate and sugar in a food processor until a fine powder forms. Add the boiling water, butter, egg yolks, coffee powder and vanilla extract and blend until well combined.In a clean bowl, whisk the egg whites until stiff peaks form when the whisk is removed, then, using a metal spoon, gently fold into the chocolate mixture.Pour the mixture into the prepared cake tin and bake for 45-55 minutes, or until a skewer inserted into the middle comes out clean.
Remove the cake from the oven and allow to cool in the tin, then transfer to the fridge for 2-3 hours.

To serve, remove the cake from the tin and place on a serving plate or cake stand, spread the crème fraîche on top, then scatter over the berries. To decorate, grate some chocolate over the top, or dust with icing sugar.

Pra variar estou de dieta! Afinal tenho que entrar no meu cvestido de noiva!
Aos poucos estou emagrecendo e o melhor de tudo, estou me sentindo mais saudável e disposta!
Minha nutricionista recomendou que eu comesse frutas vermelhas todos os dias, geralmente como com iogurte, em um shake com banana verde, mas hoje vou comer as minhas frutas vermelhas com esse bolo!

Posso comer uma porção de "junk food" uma vez por semana, então, estou perdoada! :D
Esse bolo é uma delícia, por não ter farinha na sua composição, literalmente derrete na boca!

A receita eu peguei aqui

Para o bolo:

300g chocolate meio amargo picado
225g açúcar
175ml de água fervente
225g manteiga salgada cortada em cubos
6 ovos (claras e gemas separadas)
1 colher de chá de café solúvel
2 colheres de chá de baunilha

Modo de fazer:
Pré-aqueça o fôrno a 180º.
Derreta o chocolate (em banho-maria ou no microondas em potência média, de 30 em 30 segundos)
Misture a água com o café e espere esfriar um pouquinho.
Bata as claras em neve com uma colher de açúcar e reserve.
Bata as gemas com o restante do açúcar, junte o café, o chocolate derretido e a baunilha.
Adicione as claras batidas em neve.
Forre uma fôrma de fundo removível ou aro de 23cm de diâmetro com papel manteiga e despeje a massa.
Asse por 45-55 minutos. Deixe esfriar e leve à geladeira por 2-3 horas.
O bolo vai ficar com as bordas mais altas.

Para a cobertura.

200g de creme de leite fresco.
225g de frutas vermelhas (eu usei morangos e amoras)
Açúcar de confeiteiro para polvilhar.

Modo de fazer.

Bata o creme de leite em ponto de chantilly (um ponto antes de ficar durinho)
Usando uma manga ou com uma colher espalhe o chantilly no centro do bolo.
Coloque as frutas vermelhas e polvilhe com açúcar de confeiteiro.

Charlote de Chocolate e um Pedido

Não tô pedindo nada pra ninguém, não! rsrsrsrsrs

Já tá mais na hora de contar pra vocês que, durante a viagem, quando estávamos em Paris, depois do jantar de aniversário de namoro (o Bruno ficou com vergonha dentro do restaurante), fui pedida em casamento!
É por essa e por outras que ando sumida e peço desculpa a todos! ;)
É muita coisa pra ver, se preocupar, sem contar que estou trabalhando triplicado por causa do Natal e, além de tudo, estou tentando fazer uma dieta básica, então a minha produção de doces pra postar aqui no blog também diminuiu hehehehe.
Estamos super felizes e eu tinha que compartilhar isso com vocês! :D
Essa Charlote eu fiz pra algumas amigas quando retornei de viagem, é súper fácil de fazer, o diferencial é que eu fiz a base e as bolachinhas para colocar em volta. Se você estiver com preguiça, pode fazer uma base de pão-de-ló e usar biscoito champagne ;)
Tenho duas queridas amigas que vão casar também! Todas com aliança no dedo ;)



Charlote de Chocolate

Para a massa:

4 ovos (gemas e claras separadas)

120g açúcar

120g farinha de trigo

Bata as claras em neve e adicione o açúcar, aos poucos. Retire da batedeira e incorpore as gemas e a farinha de trigo, gentilmente.

Coloque a massa em uma manga com bico nº 8 ou 10. Forre uma assadeira com papel manteiga. Usando um aro (16cm diâmetro) faça a base da torta, fazendo movimentos circulares, como se fosse um caracol.

Meça a altura do seu aro e faça os biscoitos da mesma altura, deixando um espaço de apenas 1cm entre um e outro. A idéia aqui é que os biscoitos grudem um no outro, mas que continue com formato individual.



Leve para assar a 190° até que estejam com as bordas douradas.

Reserve.

Para o mousse:
300g de creme de leite

200g de chocolate ao leite

Bata o creme de leite em picos moles. Derreta o chocolate. Verifique se está a 42°C, ou morno.

Adicione o chocolate derretido ao creme de leite batido, mexendo sempre e com vigor, usando um fuet.

Montagem:

Usando o mesmo aro, apóie as bolachas nas laterais do aro. Coloque a massa redonda no fundo, sempre tomando o cuidado para não deixar espaço. Se preferir forre o aro com papel filme ou acetato.

Preencha o interior com o mousse.

Leve ao freezer até endurecer.


Para a glaçagem:

250g creme de leite

200g calda *

50g glucose

100g chocolate meio amargo

500g chocolate ao leite fracionado (é melhor usar um de boa qualidade – puratos ou sicao)

Ferva o creme de leite com a glucose e a calda, retire do fogo e despeje sobre os chocolates já picados, misture por 30 segundos. Peneire e use a 40º.
Retire a charlotte do freezer e cubra com a glaçagem que deve estar a 40º (morna).
Você só vai precisar um pouco da glaçagem para esta receita, mas é super versátil, você pode congelá-la e usar quando quiser!

* Calda
500g água
675g açúcar

Ferva a água e o açúcar por 15 minutos. Deixe esfriar e reserve.

Yes, Bruno asked me! I'm very happy!!!
He asked me in Paris, after a romantic dinner! (he was ashamed to ask in the restaurant - so cute to be shy!)
And that's one reason for being sooooooo late in my posts around here.
I'm trying to organize a wedding, but I'm just in the beggining, I'm working A LOT because of Christmas and I'm trying to go on a diet, what makes more dificult to make goodies to post  :(
Well, this Charlote I made for a gilrs meeting in my house after coming back to Brazil.
It's very easy, and yummy, but the diference is that I made the ladyfingers from the scratch and use the same dough to do the base. But you can  make a simple sponge cake to the botton and buy some ladyfingers from your prefered labbel.
I have two girlfriends that will get marry next year too:


Charlotte Choco Lait

To the dough:
4 eggs (separeted)
120g sugar
120g all purpose flour

Beat the egg whites in firm (but not dry) peaks. Add the sugar, little by litte. By hand add the egg yolks and the flour, gently.
Put the dough in the plastic bag with a round tip.
Using a tin, make the bottom of the tart. Make the ladyfingers, letting 1 cm between the cookies.
Bake at 190º untill the edges turn gold.


To the chocolate mousse:
300g heavy cream
200g milk chocolate.

Melt the chocolate and make sure it's around 42ºC - Luke warm.
Beat the heavy cream until soft peaks.
Add the melted chocolate in the beatten cream, mixing all the time with a fouet.

Assemble. Using a roud tip (I used a 16cm one) put the round dough on the bottom. Assemble the lady fingers on the edge. Fill with the chocolate mousse.
Put in the freezer until is firm.

Chocolate glaze

250g heavy cream
200g syrup *
50g glucose
100g dark chocolate
500g milk coalting chocolate

Boil the cream the syrup and the glucose, then pour over both chopped chocolate. Mix for 30 seconds. Strain through a fine sieve and use at 40ºC.

Cover the charlotte with some glaze. You'll need just some glaze for this recipe, but you can freeze it and use it in other recipes.

* Syrup
500g water
675g sugar

Boil the water with the sugar, skim and reserve.

Bomba de Chocolate - Chamonix e Annecy!

Semana passada fomos para Chamonix e Annecy!


Chamonix é a cidade do Mont Blanc, é a montanha mais alta da Europa! Fica na divisa entre França, Suíça e Itália! E mesmo estando no verão, como faz parte dos Alpes, a neve lá é eterna! E o frio também! rsrsrsrs
É uma sensação engraçada, porque na cidade a temperatura estava em 20ºC e lá em cima -2ºC!


A vista é estonteante! Amei!!!
Almoçamos a quase 4.000m de altura! Mas o que eu gostei mesmo foi do nosso jantar, na cidade de Chamonix. Comemos raclete e fondue! Comida típica dos Alpes! :D

No dia seguinte fomos para Annecy. Conhecida como a "Veneza Francesa" por causa dos seus canais (LINDOS!), a cidade tem um lago maravilhoso, o mais limpo da europa!

Adorei o passeio!!!


Esta receita de eclair eu fiz em junho, antes da viagem. Já comi um eclair em Paris, na Fauchon e confesso que PRECISO saber o segredo deles! rsrsrsrs
Mas este aqui é uma delícia e não é difícil de fazer! O bom é que tem um gostinho de França! ;)

A receita do pâte a choux é esta daqui no mesmo post tem a receita do creme de confeiteiro.
O que muda é o formato. Ao invez de carolinas, vc deve pingar a massa com manga e bico nº 10, num formato mais comprido, de bomba.
Leve para assar a 220º, por 15 minutos, ou até que esteja douradinho.
Recheie com o creme de confeiteiro, usando uma manga e um bico nº 6. Perfure a bomba e aperte o recheio, até que esteja cheia. Você pode fazer mais de um furo para preencher bem.
Derreta 350g de chocolate ao leite francionado e mergulhe o topo da bomba. Deixe secar.

Chocolate Eclair - France - Chamonix and Annecy

Last week we went to Chamonix and Annecy! It was an amazing trip!


Chamonix is the Mont Blanc City.
Mont Blanc (French) or Monte Bianco (Italian) (meaning "White Mountain") is the highest mountain in the Alps, Western Europe and the European Union.[1] It rises 4,810.45 m (15,782 ft)[2] above sea level and is ranked 11th in the world in topographic prominence. It is also sometimes known as "La Dame Blanche" (French for "The White Lady") or "Il Bianco" (Italian for "The White"). (Font: Wikipedia)


Even if we are on Summer, there the snow never melts! Awesome! You feel weird, because downhill you have almost 20ºC degrees and when you goes up, the temperature goes down for -2ºC! Was a great experience!
The landscape is breathtaking!


Annecy is a great city too! Known as the "French Venice", because of the beautiful canals, the city also has a lake, the most clean in Europe (Font: My friend Fere hehehe), that is gourgeous!


I enjoyed a lot the trip and have to thank Fere for being such a nice friend and riding us for these beautifull places!

 
Today I'm posting an eclair recipe!
I made this eclair in June, before I came here. It's so french! I've already eatten one at Fauchon, and it was amazing! I want their secret!!!
 
I used this recipe to the pâte a choux, the base of the recipe and the Vanilla Crème Patissiere, that I used to fill the eclairs.
To make the eclairs you have to put your choux inside the pipe bag with a nº10 tip, and pipe long fingers in a tray assembled with parchment paper.
Bake the eclair at 220ºC, for 15 minutes or untill they are golden brown in the edges.
Let them cool and fill with the pastry cream, using a piping bag and a tip (nº6), pierce the bottom of each eclair. Fill the eclair with pastry cream and place on a paper-lined sheet.
To assemble your eclairs, melt 350g of compound chocolate. Drop the top of each ecclair on the melted chocolate and let them cool.

Daring Baker Challenge - Chocolate Marquise

This month Daring Baker's Challenge was host by Emma from Cook, craft, grow and Jenny from Purple house dirt.


They challenged us to make Chocolate Maquise. I can say it's perfect dessert! The texture and temperature mixes are awesome!

The maquise is like a chocolate ice cream and the caramel is deliciously creamy, that served warm under the cold marquise, make this recipe really special! The crunchy almonds and the soft meringue are great sides for this dish!

Desafio do Daring Bakers - Marquise de Chocolate.

A Marquise de Chocolate é uma sobremesa que lembra muito um sorvete. Eu achei simplesmente delicioso!

A mistura de texturas e temperaturas ficou incrível! A maquise geladinha, em cima de uma cama de caramelo quente, acompanhado do merengue macio e das amêndoas crocantes deixam essa sobremesa realmente especial! Adorei o desafio!
A montagem do prato também é um desafio, já que o sorvete começa a derreter, ma mesmoa assim, fica lindo!



Para o creme de chocolate:
140g de chocolate meio amargo picadinho
175ml de creme de leite
1/4 colher de chá de sal
1/8 de colher de chá de páprica
1 colher de sopa de rum
1 colher de sopa de glucose de milho
2 colheres de sopa de chocolate em pó
1 colher de chá de baunilha

Ferva o creme de leite. Adicione o chocolate picado e mexa até que esteja incorporado. Adicione os demais ingredientes e mexa bem. reserve.


Para a maquise:

6 ovos separados mais dois ovos inteiros
70g de açúcar
70ml de água
250g de creme de leite batido em picos firmes e reservado.
cacau em pó para cobrir.

Separe os 6 ovos e reserve as claras para o merengue.
Bata as 6 gemas, mais os 2 ovos até que dobre de volume. Enquanto isso, misture o açúcar com a água e leve para ferver em uma panela, em fogo baixo, até que forme uma calda (115ºC), o ponto é o mesmo da calda para o tiramissu.
Adicione a calda em fio aos ovos batidos, continuando bater até que a mistura esteja fria.
Adicione o creme de chocolate e o creme de leite batido, aos poucos, mantendo a massa aerada. Coloque em um marinex forrado com papel manteiga e leve ao freezer por pelo menos 6 horas.

Merengue:
6 claras
1 pitada de sal
180g de açúcar

Bata as claras em neve com a pitada de sal. Adicione o açúcar até que obtenha picos firmes. Coloque em uma manga de confeiteiro e bico pitanga. Pingue em uma fôrma forrada com papel manteiga e leve ao fôrno ligado a 200ºC com o grill ligado até que esteja dourado (ou use um maçarico).

Para as Amêndoas:

1 clara batida levemente
1/2 xícara de açúcar
1 colher de chá de canela
1/2 colher de chá de sal
1/2 colher de chá de páprica
1 xícara de amêndoas inteiras

Misture o açúcar com a canela, sal e páprica. Misture à clara batida. Adicione às amendoas. Leve para assar em forno pré-aquecido a 200ºC, em forma forrada com papel manteiga.

Faça o caramelo.

Para montagem. Desenforme a marquise de chocolate e corte em cubinhos. Envolva-os em cacau em pó.


faça uma cama de caramelo. Disponha os cubinhos de marquise, os merengues e decore com as amêndoas.

Cupcake Floresta Negra!

Tô um pouco chateada de não ter conseguido participar este mês do Daring Bakers... Estava na loucura da Páscoa e quando vi, passou! Eu até tinha comprado Maple Syrup (xarope de bordô) que era o ingrediente principal da receita , mas... acabou passando... deixa pra mês que vem, né?


A sorte é que eu tinha essa receita de cupcake de floreta negra pra postar! Este cupcake eu fiz já faz um tempinho, é simples e muito gostoso!
A massa de chocolate eu fiz essa receita aqui e misturei 100g de cerejas picadas.
A cobertura é chantimix (o pacotinho pequeno), é só preparar conforme a embalagem (não esqueça de deixar pelo menos um dia na geladeira antes de bater)
E a decoração você faz com cereja com cabinho e tudo. Eu usei ao marrasquino, mas se você tiver elas frescas também fica lindo!
Fica a dica!
E o maple syrup? Eu acabei comendo na panqueca do café da manhã de Páscoa! Tava muuuuito bom! Qualquer dia posto por aqui a receita!

I'm a little upset for not participating this month on Daring Baker's Challenge! I was working a lot because of the Easter and when I realized, the time was gone! I had bought the maple syrup to make the recipe, but it wasn't a waist of money (in Brazil it isn't cheap!), because I ate it on my pancakes at Easter breaksfast! Yummy!

I'm lucky, because I found this pictures of a black forest cupcake that I made a while ago, so I have a recipe to post this week! And this cupcake certainly worth the wisk!
It's delicious, and it's so good looking! Everybody loves it!
For the chocolate muffins I used this recipe, and added 100g choped marraschino cherries to the dough. The topping I made with whipped cream and a cherry on top! So easy!

Esse mês o meu blog completou um ano!
Nem acredito como o tempo passou tão rápido!

This month I'm celebrating my first bloganniversary!
I can't believe! Time really flies!
I learned so much this year and knew a lot of amazing blogs and bloggers!
It's my first giveaway, but unfortunatly, it is for brazilian followers only :( but I promiss I'm thinking about how to make an international giveaway, ok?
And to celebrate this special date, I made this special cupcakes!

Chocolate muffins:

1/2 cup hot water
6 TS cocoa powder
1/4 cup milk
1 ts vanilla
1/2 cup butter
10 TS brown sugar
6 TS granulated sugar
2 eggs
1 cup all-purpose flour
3/4 ts baking powder
1/4 ts salt

Preheat oven at 375ºF. Dissolve the cocoa powder in hot water. Beat the butter with brown and granulated sugar, until creamy. Add the eggs, beat well. Add milk. Mix the flour with baking powder and salt, add to the cream, untill well combined.
Divide the batter evenly among the cupcake liners, filling them about 2/3-3/4 full. Bake until golden and a toothpick inserted in the center comes out clean, about 18 to 22 minutes. Remove from the oven and allow to cool for 5 minutes in the pans. Transfer to wire racks to cool completely.

To the filling I made this brazillian white chocolate fudge.

To the chocolate ganache:

180g semi sweet chocolate chopped
100g heavy cream

Boil the heavy cream. Wait 5 minuts and add the chocolate. Mix well until smooth. Decorate your cupcake.

Meringue filled coffe cake - Daring Bakers Challenge!

This month DB challenged us to make Meringue filled coffe cake. They suggested us two cake/ filling flavours and I chose the garam masala, cashew nuts, chocolate meringue one.
You can't say that has garam massala in the filling, it just get a little spicy.
This recipe asks saffron in the dough, the collor is gourgeous! And the flavour combo is delighful! The cake is perfect to eat with a cup of coffe.
