I'm trying to organize a wedding, but I'm just in the beggining, I'm working A LOT because of Christmas and I'm trying to go on a diet, what makes more dificult to make goodies to post :(
Well, this Charlote I made for a gilrs meeting in my house after coming back to Brazil.
It's very easy, and yummy, but the diference is that I made the ladyfingers from the scratch and use the same dough to do the base. But you can make a simple sponge cake to the botton and buy some ladyfingers from your prefered labbel.
I have two girlfriends that will get marry next year too:

To the dough:
4 eggs (separeted)
120g sugar
120g all purpose flour
Beat the egg whites in firm (but not dry) peaks. Add the sugar, little by litte. By hand add the egg yolks and the flour, gently.
Put the dough in the plastic bag with a round tip.
Using a tin, make the bottom of the tart. Make the ladyfingers, letting 1 cm between the cookies.
Bake at 190º untill the edges turn gold.
To the chocolate mousse:
300g heavy cream
200g milk chocolate.
Melt the chocolate and make sure it's around 42ºC - Luke warm.
Beat the heavy cream until soft peaks.
Add the melted chocolate in the beatten cream, mixing all the time with a fouet.
Assemble. Using a roud tip (I used a 16cm one) put the round dough on the bottom. Assemble the lady fingers on the edge. Fill with the chocolate mousse.
Put in the freezer until is firm.
Chocolate glaze
250g heavy cream
200g syrup *
50g glucose
100g dark chocolate
500g milk coalting chocolate
Boil the cream the syrup and the glucose, then pour over both chopped chocolate. Mix for 30 seconds. Strain through a fine sieve and use at 40ºC.
Cover the charlotte with some glaze. You'll need just some glaze for this recipe, but you can freeze it and use it in other recipes.
