Croissants!

I'm posting the DB Challenge late this month, sorry! I just came back from vacation, and I'm still organizing my mess!
But I was so excited about the DB this month, that it was impossible not to try...
I came back from France about 2 weeks ago and I'm already missing the croissants!
I learned them at my Boulangerie classes, and I had to try to bake them by myself, so it was a great oportunity!
It wasn't easy to open the dough without the machine, but my boyfriend helped me, in exchange for some croissants sandwiches, so it wasn't that hard!

Estou toda atrapalhada, voltei há mais de duas semanas das férias, mas ainda estou me ajeitando...

Mas, quando eu vi o desafio do Daring Bakers esse mês eu fiquei muito feliz! E não pude deixar de fazer! Apesar do atraso...
Como eu falei, eu mal voltei de viagem, mas já estou morrendo de saudades dos croissants!
E como eu aprendi na aula de Boulangerie, tinha que treinar de qualquer jeito, então foi unir o útil ao muuuuito agradável!
Não é muito fácil esticar a massa, na aula tínhamos uma máquina que fazia isso por nós, mas tive a ajuda do Bruno, que recebeu a recompensa depois em um sanduíche feito com esse pão macio, amanteigado que derrete na boca!

Receita:

1¼ de colher de chá

3 colheres de sopa de água morna
1 colher de chá de açúcar
1¾ xíc. de farinha de trigo
2 colheres de chá de açúcar

1 colher de chá de sal
1/2 xíc. de leite
115g de manteiga sem sal, gelada
1 ovo para pincelar

Faça uma esponja com a água morna, o açúcar e o fermento em uma vasilha pequena e deixe descansar uns 5 minutos até ficar espumoso.
Amorne o leite e dissolva nele o sal e o restante do açúcar.
Numa tigela, coloque 1 xícara da farinha e junte a mistura de fermento e o leite reservados.
Misture até incorporar.
Junte mais farinha, aos poucos, e sove a massa, polvilhando farinha até que não grude mais nas mãos.
Coloque a massa em uma tigela untada com um pouco de óleo, cubra com um plástico e deixe em temperatura ambiente até triplicar de volume (1 a 3 horas).
Polvilhe a mesa com farinha e deite a massa descansada.
Abra a massa com o rolo, formando um retângulo de mais ou menos 20cm X 30cm. Faça uma volta simples, conforme a foto.



Prepare a manteiga, abrindo-a em um retângulo de 20cm x 20 cm, com um rolo e leve à geladeira, pois a manteiga deve estar gelada quando for usada.
Abra a massa do croissant em um retângulo de 20cm x 30cm.
coloque o retângulo de manteiga sobre 2/3 da massa e feche, fazendo uma volta simples.
Feche bem os lados, para a manteiga não escapar.
Abra a massa novamente em um retângulo de 20cm x 30cm e faça uma volta dupla. dobrando 1/3 da massa para dentro e os outros 2/3, dobrando ao meio mais uma vez. Conforme a foto.
Leve à geladeira por 45 minutos.
Repita a operação, fazendo mais uma volta simples
Leve à geladeira por mais 45minutos.
Retire da geladeira e abra a massa em um retãngulo de 20cm x 30cm, ou até que fique com 0,5cm de espessura.
Corte em triângulos de 8 cm de base. Enrole os croissants, começando pela base até a ponta. Se preferir, faça um pequeno corte na base, assim vc poderá fazer o seu croissant como uma meia-lua, no final dobrando as pontas para dentro.

Deixe crescer até dobrar de volume.
Pincele com um ovo batido e leve ao fôrno pré-aquecido a 240ºC, por 15 minutos.

Desafio do Daring Baker's - Baklava

Mais um desafio do Daring Bakers! Provavelmente vou ficar dois meses sem participar dos desafios, já que, como contei no último post, to indo viajar pra estudar patisserie, e no lugar onde vou ficar não tem uma cozinha completa para os estudantes cozinharem fora do horário de aula, somente uma pequena cozinha com microondas e geladeira, pra refeições rápidas. Vou sentir falta!
Mas tenho algumas receitas que eu já fiz e que quero postar durante este tempo, sem falar que quero usar o blog como um diário da viagem.
Esse mês o DB nos desafiou a fazer Baklava. Um doce feito com massa phyllo, uma massa bem fininha, recheado com nozes, amêndoas e pistaches e coberto com uma calda de mel. Eu adorei fazer a massa phyllo, eu nunca tinha feito (só tinha usado a comprada) e foi bem legal pra aprender! O recheio é bem gostoso, só a calda que eu achei que tinha mel demais. Mas com certeza valeu a pena fazer, principalmente para aprender a técnica de massa phyllo.
A Erica, que propôs o desafio desse mês, indicou um vídeo muito bom, não entendi o que estavam falando mas as imagens são auto-explicativas! rsrsrs As imagens da Erica são muito boas também, vale a pena dar uma olhadinha!

Para a massa phyllo:

1 1/3 xic fariha de trigo
1/8 sal
1/2 xic menos 1 colher de sopa de água
2 colheres de sopa de óleo de canola
1/2 colher de chá de vinagre branco



Misture todos os ingredientes e sove por 20 minutos. Reserve.
Abra a massa, usando a técnica mostrada no vídeo.

Para a calda:

1 1/4 xic mel
1 1/4 xic água
1 1/4 xic açúcar
1 canela em pau
1 casca de limão
4 cravos da índia

Misture tudo e leve ao fogo. Deixe ferver por 10 minutos. Reserve.
 
Para o recheio:
 
2 colheres de chá de canela
170g de amêndoas
150g nozes
140g pistaches
2/3 xíc açúcar

Leve os pistaches, as amêndoas e as nozes ao fôrno po 10 minutos. Deixe esfriar. Bata num processador ou liquidificador as amêndoas, nozes e pistaches com o açúcar e a canela..

Montagem:

200g manteiga derretida
massa phyllo
recheio



Monte em uma fôrma untada com manteiga uma camada de massa phyllo. Pincele com manteiga. Faça uma camada de recheio. Continue até terminar com massa phyllo. Pincele com manteiga, corte em pequenos formatos (a Erica cortou em triângulos eu usei um cortador redondo)  e leve para assar em fôrno pré-aquecido a 180º po 30 minutos, ou até que a massa esteja crocante.
Tire do fôrno e, ainda quente, despeje a calda. Deixe a massa absorver a calda de um dia para o outro. Para servir polvilhe açúcar de confeiteiro.

One more DB Challenge! I'm afraid I'll not be able to join DB over the next two months. Because, like I told last post I'm going to travel to study patisserie and in the place students will stay there isn't a complete kitchen, just a small one with refrigerator and microwave, for fast meals... Certainly I'll miss a lot the challenges!!!  
This month Daring Baker's challenged us to make Baklava. Like Erica, from Erica's Edibles  explaned, it is a "a sweet rich pastry made with layers of phyllo dough and nuts sweetened with simple syrup. Baklava is widely knows as a Greek dessert, but it’s origin has really never been pinpointed as many Middle Eastern countries also name it as their own".
And we had to make phyllo dough from the scratch! I had never made it, and it wasn't that dificult! I think this was the best part of the recipe! To learn how to make phyllo dough!
The filling is delicious, made with nuts, sugar and cinnamon! Just the syrup had too much honey for my taste, next time I'll make it with less or without honey!
But certainly it worths a lot, mostly because of the phyllo dough!

Daring Baker Challenge - Chocolate Marquise

This month Daring Baker's Challenge was host by Emma from Cook, craft, grow and Jenny from Purple house dirt.


They challenged us to make Chocolate Maquise. I can say it's perfect dessert! The texture and temperature mixes are awesome!

The maquise is like a chocolate ice cream and the caramel is deliciously creamy, that served warm under the cold marquise, make this recipe really special! The crunchy almonds and the soft meringue are great sides for this dish!

Meringue filled coffe cake - Daring Bakers Challenge!

This month DB challenged us to make Meringue filled coffe cake. They suggested us two cake/ filling flavours and I chose the garam masala, cashew nuts, chocolate meringue one.
You can't say that has garam massala in the filling, it just get a little spicy.
This recipe asks saffron in the dough, the collor is gourgeous! And the flavour combo is delighful! The cake is perfect to eat with a cup of coffe.

Daring Bakers Challenge - Rosca de açafrão recheada com merengue, castanha de cajú, chocolate e garam masala.

Esse mês o DB nos desafiou a fazer rosca recehada. Eu estou começando a gostar de fazer esse tipo de massa.
Eles sugeriram dois sabores e eu acabei optando pela massa com açafrão e recheio de merengue, chocolate e garam massala. Já que eu adoro um tempero mais indiano. Mas ficou súper suave. Apenas dá pra sentir o recheio meio picante, mas não dá pra identificar bem o sabor do garam massala.
A combinação de sabores é simplesmente perfeita! E a cor da rosca é linda!!! Eu não comprei o pistilo de açafrão, já que é bem salgadinho, mas usei um sachê daquela mistura usada para paella, conforme a foto.
É um doce perfeito pra comer no café da tarde, com uma xícara de café.




Para o recheio

1 xic castanha de cajú picadinha
2 colheres de sopa de açucar
1/2 colher de chá de garam masala (se não achar pode usar canela em pó)
1 barra de chocolate meio amargo (170g) picado

Misture o açúcar com o garam massala e reserve.

Merengue:
3 claras
1/2 xic de açúcar
1/2 colher de chá de baunilha
1 pitada de sal

Bata as claras com o sal em picos firmes. Adicione o açúcar e a baunilha. Reserve.



Para a rosca:

4 xic farinha de trigo
1/4 xic de açúcar
3/4 colher de chá de sal
1 pacote de fermento biológico (10g)
3/4 xic leite
1/4 xic água
1/2 manteiga
2 ovos em temperatura ambiente
10 pistilos de açafrão (eu usei o paelleiro - 1 pacote - conforme a foto abaixo)

Misture o leite, a manteiga e a água. Leve para ferver. Assi m que ferveu, desligue o fogo e misture o açafrão. Deixe amornar.
Misture ...g de farinha, o açúcar, o sal, e o fermento. Acrescente o líquido e misture bem. Vá acrescentando o restante até que desgrude da mão. Sove um pouco. Leve para descansar até que dobre de volume (mais ou menos 1 hora). Separe a massa em duas bolinhas e abra em dois quadrados de 25cm x 50cm, aproximadamente. Recheie cada quadrado com metade do merengue, salpique a metade do açúcar misturado ao garam massala em cada quadrado, a metade da castanha e do chocolate. Deixando uma borda de pelo menos 2cm. Enrole e para fechar pincele um pouco de água. Feche as pontas e faça cortes na massa a cada 3 cm. Deixe crescer por mais 1 hora e leve ao forno pré-aquecido para assar por 30-40 minutos, ou até que esteja levemente dourada. Retire do forno e salpique com açúcar de confeiteiro.
Rende duas roscas médias.

Daring Bakers Challenge - Panna Cota and Florentines!

Daring Baker’s this month was hosted by Miss Mallory, from “A sofa in the kitchen”, and she challenged us to make pana cota and florentines cookies.
Pana Cota is a delicious neutral creamy dessert. It’s a very versatil recipe, so you can add chocolate, vanilla, honey, or any other flavour that you like!
But what really makes the difference in this recipe, is the top.
You can top it with jam, syrup or gelée, that what was my choice.
I made strawberry gelée, that is like a strawberry jam that you add gelatine.
But what I had really enjoyed in this challenge was the florentines cookies! I don’t know why, but I think I’m more a cookie person, than a dessert person.
Florentines are chunky oat and chocolate sandwich cookies! Very yummy!
And the combination of the creamy of the pana cota and the chunky of the florentines are just awesome!

Vanilla Panna Cota:

Ingredients

1 cup (240 ml) whole milk
1 tablespoon (one packet) (15 ml) (7 gm) (¼ oz) unflavored powdered gelatin
3 cups (720 ml) whipping cream (30+% butterfat)
1/3 cup (80 ml) honey (I omitted)
1 tablespoon (15 ml) (15 gm) (½ oz) granulated sugar (I used 3 Ts)
I added 1 vanilla bean
pinch of salt

Directions:
1. Pour the milk into a bowl or pot and sprinkle gelatin evenly and thinly over the milk (make sure the bowl/pot is cold by placing the bowl/pot in the refrigerator for a few minutes before you start making the Panna Cotta). Let stand for 5 minutes to soften the gelatin.
2. Pour the milk into the saucepan/pot and place over medium heat on the stove. Heat this mixture until it is hot, but not boiling, about five minutes. (I whisk it a few times at this stage).
3. Next, add the cream, honey (I omitted), sugar, vanilla (bean and grains) and pinch of salt. Making sure the mixture doesn't boil, continue to heat and stir occasionally until the sugar and honey have dissolved 5-7 minutes.
4. Remove from heat, allow it to sit for a few minutes to cool slightly. Remove the vanilla bean. Then pour into the glass or ramekin.
5. Refrigerate at least 6 hours or overnight. Add garnishes and serve.

Fruit Gelée:

Ingredients: 1 cup (240 ml) (230 gm) (8 oz) fruit (strawberries, raspberries, mango, blackberry, etc.)
*Note: Certain fruits interact with gelatin and stop it gelling like pineapple and kiwi etc.
3 tablespoons (45 ml) water 1/4 cup (60 ml) (60 gm) (2 oz) granulated sugar
1½ teaspoons (7½ ml) (3½ gm) (1/8 oz) unflavored powdered gelatin

Directions:
1. Sprinkle gelatin over water.
2. Place fruit and sugar in a small saucepan and simmer until sugar has dissolved. Now mix the gelatin into the strawberry mixture and stir until gelatin has dissolved.
3. Remove from heat and allow to cool (close to room temp, again, if you're planning on layering on pouring on top of your Panna Cotta, a hot mixture will also heat up your chilled Panna Cotta).

Florentines Cookies:

2/3 cup (160 ml) (150 gm) (5.3 oz) unsalted butter
2 cups (480 ml) (160 gm) (5 2/3 oz) quick oats
1 cup (240 ml) (230 gm) (8 oz) granulated sugar
2/3 cup (160 ml) (95 gm) (3⅓ oz) plain (all purpose) flour
1/4 cup (60 ml) dark corn syrup
1/4 cup (60 ml) whole milk
1 tsp (5 ml) vanilla extract
pinch of salt
1½ cups (360 ml) (250 gm) (9 oz) dark or milk chocolate

Mais um Daring Bakers!
Esse mês fomos desafiados pela Miss Mallory do “A sofa in the kitchen” a fazer panna cota e florentines!
A panna cota é uma sobremesa italiana, cremosa, bem neutra.
Ela é bem versátil, podendo ser feita com chocolate, mel, baunilha ou algum saborizante de sua escolha.
O que a torna realmente especial é a calda ou geléia que você usar para cobrir.
Neste caso, para a cobertura a host nos passou uma receita de "gelée" de frutas. Eu fiz a minha de morango. É uma geléia só que com gelatina, o que dá um sabor especial à receita.
Já a panna cota eu fiz a receita clássica de baunilha, da receita que foi passada. Eu apenas omiti o mel e adicionei fava de baunilha.
Mas o que eu realmente amei nesse desafio foi a receita de florentines!
Florentines são uns biscoitos bem fininhos de aveia recheados com chocolate. Muuuuuuito bom!
Eu acho que sou do tipo de pessoa que prefere um bom biscoito recheado à uma sobremesa cremosa. Mas o bom mesmo é comer tudo junto! rsrsrsrsrs
Com certeza a cremosidade da panna cota com a crocância dos biscoitos formaram a combinação perfeita!

Lá vai a receita (a original está aqui):

Para a panna cota
:

1 xícara de leite integral
1 colher de sopa (7g) de gelatina em pós sem sabor
3 xícaras de creme de leite
3 colheres de sopa de açúcar
1 fava de baunilha (ou 1 colher de chá de essência)
1 pitada de sal

Coloque o leite em uma panela e borrife a gelatina por cima do leite, para hidratar sem formar gruminhos. Deixe descansar por cinco minutos e leve ao fogo baixo, para dissolver a gelatina, mexendo sempre por 5 minutos. Não deixe ferver.
Corte a baunilha e raspe os grãos.
Adicione ao leite o creme de leite, o açúcar, os grãos de baunilha e a fava, e uma pitada de sal.
Continue mexendo em fogo baixo, por mais cinco minutos, sem deixar ferver.
Deixe amornar e retire a fava de baunilha.

Despeje em recipiente e leve à geladeira para gelar por pelo menos 6 horas.

Para o "gelée" de morango:

1 xícara (230g) de morangos (você pode usar outras frutas tipo manga, framboesa, mas algumas frutas não reagem muito bem com a gelatina, como abacaxi e kiwi)
¼ xícara (60g) de açúcar
3 colheres de sopa (45ml) de água
1 e ½ colher de chá (3,5g) de gelatina em pós sem sabor

Hidrate a gelatina na água. Bata o morango no liquidificador ou apenas amasse. Leve ao fogo baixo com o açúcar até que este derreta. Adicione a gelatina e mexa bem até que a gelatina esteja dissolvida.

Remova do fogo e espere esfriar para colocar por cima da pana cota. Leve à geladeira por mais umas 2 horas, pelo menos.

Para as florentines:

2/3 xícara (160ml) de manteiga sem sal
2 xícaras (160g) aveia
1 xícara (230g) açúcar refinado
2/3 xícara (95g) farinha de trigo
¼ xícara (60ml) de glucose de milho
1 colher de chá de essência de baunilha
1 pitada de sal
1 xícara e meia (250g) de chocolate (meio amargo ou ao leite) picado para rechear

Derreta a manteiga no fogo. Desligue o fogo e adicione os demais ingredientes (menos o chocolate). A massa vai ficar bem mole mesmo.
Coloque sobre uma folha de silicone ou fôrma de silicone para assar (eu usei papel manteiga e mesmo untando, grudou)
Pré-aqueça o forno a 190ºC.
Asse por 10-12 minutos ou até que as bordas estejam douradas.
Deixe esfriar.
Derreta o chocolate em banho-maria ou no microondas usando a potência média (5).
Esfregue chocolate derretido em uma das bolachas e feche com outra, formando um sanduíche.
Espere o chocolate esfriar e endurecer.

Daring Baker Challenge - Joconde Imprime - Passion Fruit Mousse Pie

I'm posting DB Challenge very late this month!
This month Astheroshe from the Blog Accro challenged us to make joconde imprime.

"Joconde imprime /entremets. A joconde imprime (French Baking term) is a decorative design baked into a light sponge cake providing an elegant finish to desserts/torts/entremets/ formed in ring molds. A joconde batter is used because it bakes into a moist, flexible cake. The cake batter may be tinted or marbleized for a further decorative effect."

This sponge turns simple pies into beautiful desserts.
Unfortunatelly mine didn’t work out as I wanted. I wanted to make stripes but I didn’t find the tool to buy. Even though, I tried to make with a fork but it failed because the strippes wer too thin and they closed while baking.
I made another one, but as I would use AT pie’s bottom, I didn’t make any particular design, because I was sure that the stripes would be like expected.
Well, I had to use the dough the way it was, because as allways I let to make the recipe too late (26th Day of the month)
But the dough is so delicious and I made a passion fruit and white chocolate ganache pie that is really tasty!
But I’m still challenged by joconde imprime. So I decided to buy the stripe tool and then I WILL post my recipe here.

Passion Fruit Pie

Passion Fruit Mousse
30g egg White
60g sugar
175g heavy cream
10g no-flavor jelly
30ml water
90g passion fruit juice

Beat the egg whites until firm snow peaks with the sugar.
Prepare the jelly and mix with the juice. Let it cool.
Whip the heavy cream, until firm peaks. Reserve.
Mix the heavy cream with the jelly mixture. Add egg whites softly.

White chocolate ganache finally chopped
250g white chocolate
190g heavy cream
60g butter

Heat the cream in a medium sized saucepan over medium heat. Bring just to a boil. Immediately pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir the butter with a whisk until smooth.

Passion fruit jam to decorate.
Assemble the pie
Cut two slices of the joconde using a 20cm springform. Cut joconde strap and put on the form edges.
Put a joconde slice on the bottom of form. Fill with the ganache. Put the other slice of joconde and fill with the mousse. Take the pie to the refrigerator, furing the night, or at least 4 hours.
Decorate with passion fruit jam before serving.

Desafio do Daring Bakers - Joconde Decorado - Torta Mousse de Maracujá

Estou postando o Daring Bakers súper atrasado esse mês!
Neste DB Astheroshe do Blog Accro nos desafiou a fazer Joconde decorado.
O joconde uma variedade de biscoito usada para a montagem de tortas modernas, nas quais predomina maior quantidade de mousse utilizada como recheio sobre o biscoito. O joconde também pode ser decorada com pate à cigarrete de diversos sabores e cores.(extraído do livro Técnicas de Confeitaria Profissional, escrito por Mariana Sebess, da Senac Editora, p.125)
Infelizmente, o meu não saiu do jeitinho que eu queria.
Eu queria fazer listras, mas não tinha a ferramenta, mas mesmo assim tentei fazer com um garfo e não deu muito certo, já que as listras, por serem muito fininhas, acabaram se fechando.
Eu até tinha feito uma segunda opção, com o restinho da massa, pensando em colocar no fundo da torta e por isso não caprichei muito, confiante que as listras da outra fornada sairiam de acordo com o esperado.
Enfim, tive que usar o joconde decorado que não deu muito certo mesmo, já que, pra variar deixei o DB pro último minuto!
Mas a massa é uma delícia e eu fiz a minha torta de ganache de chocolate branco com mousse de maracujá, que ficou muito gostosa! Servi para algumas amigas e elas adoraram!

Mas me senti realmente desafiada a fazer o joconde decorado, vou comprar a ferramenta e depois posto aqui como que ficou!

Joconde

Ingredientes:

85g amêndoas moídas
75g açúcar de confeiteiro
3 ovos
3 claras
10g açúcar cristal
30g manteiga derretida
20g farinha de trigo
5g amido de milho

Modo de fazer:

Bata as claras em neve com o açúcar cristal. Reserve.
Bata os ovos com as amêndoas e o açúcar de confeiteiro. Adicione a farinha e o amido de milho peneirados. Adicione aos poucos as claras em neve, mexendo delicadamente.

Pâte à cigarrete

Ingredientes:

200g manteiga sem sal em temperatura ambiente
200g açúcar de confeiteiro
7 claras
170g farinha de trigo
60g cacau em pó

Modo de Fazer:

Bata a manteiga com o açúcar de confeiteiro. Acrescente as claras até que estejam incorporadas à massa. Adicione a farinha e o cacau em pó peneirados.
Para o Joconde decorado
Forre uma forma com papel manteiga, untado e enfarinhado. Espalhe a pâte à cigarrete sobre o papel manteiga uniformemente. A massa deve ficar fininha (eu usei duas formas de 30cm x 40cm). Passe o pente metálico sobre a pâte à cigarrete, fazendo uma leve pressão de uma extremidade para a outra. Leve a forma ao freezer até que esteja bem firme. Pelo menos 15 minutos.
Despeje a massa do joconde sobre a pâte à cigarrete (também pude usá-la para duas fornadas).
Leve ao forno pré-aquecido a 200º por 12 minutos ou até que a massa esteja assada. Cuidado para não assar demais para poder trabalhar com a massa.
Deixe esfriar, desenforme e solte o papel manteiga.

Para a torta de maracujá

Mousse de maracujá

Ingredientes:

30g de claras
60g de açúcar
175g creme de leite
10 g de gelatina em pó (eu usei um pouco menos de ágar ágar)
30ml de água
90g de suco de maracujá concentrado

Modo de fazer:

Bata as claras em neve com o açúcar. Reserve.
Bata o chantilly em picos firmes. Reserve.
Hidrate a gelatina com a água e leve para derreter no microondas em potência média por 15 segundos. Adicione o suco de maracujá. Deixe esfriar.
Misture o creme de leite ao suco de maracujá e acrescente as claras em neve aos poucos, incorporando de leve.

Ganache de chocolate branco

Ingredientes:

250g de chocolate branco picado
190g de creme de leite freso
60g de manteiga

Modo de fazer:

Aqueça o creme de leite até levantar fervura. Desligue, espere um minuto e acrescente o chocolate e misture até que esteja derretido e incorporado.

Suco de maracujá para regar a massa.
Geléia de maracujá para cobrir.

Montagem:

Use um aro de 20cm. Corte uma tira do joconde decorado, com o comprimento da circunferência do aro. Talvez você precise emendar, sendo a tira um pouco mais baixa que o aro.
Corte usando o aro 2 círculos do joconde que restar.
Forre o aro com plástico filme por dentro e papel manteiga nas bordas. Coloque a tira do joconde nas bordas do aro, por dentro. Coloque uma fatia do joconde no fundo e regue com um pouco do suco. Como já temos a tira de joconde nas bordas, você vai precisar ajustar o círculo, cortando um pouco as bordas do círculo para ajustar. Espalhe a ganache. Coloque outra fatia do joconde e regue com o suco. Despeje o mousse de maracujá e alise. Guardar na geladeira, de preferência de um dia para o outro. Para servir cubra com geléia de maracujá.
Sirva bem gelada.

Daring Baker Challenge - Stollen

This month DB challenged us to bake Stollen.
Stollen is a German bread-like fruitcake traditionally baked this time of year. I already knew it, because it is very traditional in my town that was colonized by German people.



I’ve never baked Stollen, but I always wanted to. And I loved the opportunity! Thank you Penny!!!

Esse mês o DB nos desafiou a fazer Stollen. Stollen é um pão de frutas alemão tradicionalmente feito nesta época do ano.



Eu já conhecia esse doce bem comum na minha cidade, já que foi colonizada por alemães. Eu nunca tinha feito, mas sempre quis aprender a fazer! Eu simplesmente amei fazer Stollen! Obrigada Penny!!!

Ingredientes:

60 ml água morna
14g de fermento biológico
240ml de leite
140g de manteiga
770g de farinha – mais um pouco para abrir a massa
115g açúcar
¾ colher de chá de sal
1 colher de chá de canela em pó
3 ovos batidos
raspas de 1 limão e 1 laranja
135g de frutas cristalizadas (eu não usei e aumentei as outras frutas secas)
170g de passas
3 colheres de sopa de rum
2 colheres de chá de baunilha
100g de amêndoas em lascas
12 cerejas cortadas ao meio e drenadas
Manteiga e açúcar de confeiteiro para cobrir



Deixe as passas de molho no rum ou em suco de laranja se não quiser usar álcool.
Ferva o leite com a manteiga e deixe amornar.
Enquanto isso misture a água morna com o fermento biológico.
Misture a farinha, o açúcar, a canela.
Bata os ovos com a essência de baunilha e as raspas de limão e laranja.
Junte a mistura de farinha e sove bem. Deixe descansar por pelo menos 10 minutos. Adicione as frutas secas e misture delicadamente, principalmente as cerejas para não ficar cor-de-rosa a massa.
Coloque numa tigela, cubra com filme plástico e leve à geladeira para crescer aos poucos do dia para a noite.
Abra a massa com um rolo e enrole como um rocambole. Junte as pontas, formando uma guirlanda. Faça cortes na massa a cada 8 cm. Deixe crescer por pelo menos 2 horas.
Leve para assar por 20 a 30 minutos.
Tire do forno e pincele manteiga derretida sobre o stollen e polvilhe o açúcar de confeiteiro. Repita esta operação mais duas vezes para formar uma crostinha.
Espere esfriar e sirva.

Daring Baker's Challenge - Crostata!

Is finally Summer!!! Of course is not official, but I was missing the sun and the warm weather. This weekend I didn’t have class so I could make the Daring Baker’s Challenge. Just in time, today is the last day!
My pets are loving the good weather! As you can see, they enjoyed the day outside!



This month Simona from Briciole challenged us to make crostata.
Crostata is like a pie, that can be filed with fruits, jam or pastry cream.
I decided to put all together, so I filed my crostata with pastry cream and strawberry coulis, that’s like a jam, a little thicker, like a syrup.
I loved the result, mostly the dough. Certainly I’ll keep it for other recipes. Thank you Simona!

Vanilla Crème Patissiere:

1 cup (225 ml.) whole milk 2 Tbsp. cornstarch 6 Tbsp. (100 g.) sugar 1 large egg 2 large egg yolks 2 Tbsp. (30 g.) unsalted butter 1 Tsp. Vanilla
Directions:
1. Dissolve cornstarch in ¼ cup of milk. Combine the remaining milk with the sugar in a saucepan; bring to boil; remove from heat.
2. Beat the whole egg, then the yolks into the cornstarch mixture. Pour 1/3 of boiling milk into the egg mixture, whisking constantly so that the eggs do not begin to cook.
3. Return the remaining milk to boil. Pour in the hot egg mixture in a stream, continuing whisking.
4. Continue whisking (this is important – you do not want the eggs to solidify/cook) until the cream thickens and comes to a boil. Remove from heat and beat in the butter and vanilla.

Strawberry Coulis:

160g strawberries
160g sugar
1/2 lemon juice

Melt the sugar. Add the strawberries and crush them. Add the lemon juice. Let it simmer for 10-15 minutes, until the syrup consistence. Let it cool.

Crostata:
Ingredients

•1/2 c. minus 1 tablespoon [105 ml, 100 g, 3 ½ oz] superfine sugar (see Note 1) or a scant 3/4 cup [180ml, 90g, 3 oz] of powdered sugar
•1 and 3/4 cup [420 ml, 235 g, 8 1/4 oz.] unbleached all-purpose flour
•a pinch of salt
•1 stick [8 tablespoons / 4 oz. / 115 g] cold unsalted butter, cut into small pieces
•grated zest of half a lemon (you could also use vanilla sugar as an option, see Note 2)
•1 large egg and 1 large egg yolk, lightly beaten in a small bowl

How to make:



1.Whisk together sugar, flour and salt in a bowl.
2.Rub or cut the butter into the flour until the mixture has the consistency of coarse crumbs. You can do this in the bowl or on your work surface, using your fingertips or an implement of choice.
3.Make a well in the center of the mounded flour and butter mixture and pour the beaten eggs into it (reserve about a teaspoon of the egg mixture for glazing purposes later on – place in the refrigerator, covered, until ready to use).
4.Add the lemon zest to your flour/butter/egg mixture.
5.Use a fork to incorporate the liquid into the solid ingredients, and then use your fingertips.
6.Knead lightly just until the dough comes together into a ball.
7.Shape the dough into a flat disk and wrap in plastic wrap. Place the dough in the refrigerator and chill for at least two hours. You can refrigerate the dough overnight.
1.Heat the oven to 350ºF [180ºC/gas mark 4].
2.Take the pasta frolla out of the fridge, unwrap it and cut away ¼ of the dough. Reserve this dough to make the lattice top of the crostata. Refrigerate this dough while you work on the tart base.
3.To help roll the crostata dough, keep the dough on top of the plastic wrap that you had it wrapped in. This can help rolling the dough and can also help when transferring the dough to your pan. You can also use parchment paper for this. However, you can also roll the dough directly on a work surface if you prefer.
4.Lightly dust the top of the dough and your work surface (if you’re rolling directly on a work surface) with flour. Keep some flour handy to dust the dough as you go along.
5.If the dough is very firm, start by pressing the dough with the rolling pin from the middle to each end, moving the rolling pin by a pin's width each time; turn the dough 180 degrees and repeat; when it softens, start rolling.
6.Roll the dough into a circle about 1/8th inch (3 mm) thick.
7.If you used the plastic wrap or parchment paper as rolling surface, flip dough over the pan, centering it, and delicately press it all around so the corners are well covered. Peel away the plastic wrap.
8.Trim the excess dough hanging over the edges of the pan. Press the remaining dough around the border into the sides of the pan making sure the border is an even thickness all the way around.
9.Prick the bottom of the dough with a fork in several places.
10.Put the tart in the oven and bake for 30 minutes.
11.After 35 minutes, check the tart, and continue baking until the tart is of a nice golden hue.
12.When done, remove the tart from the oven and let cool. If you have used a tart pan with a removable bottom, then release the tart base from the fluted tart ring.
13.Make sure the tart is completely cool before filling.
14.Cover the bottom of the crostata crust evenly with the pastry cream.
15. Cover the top with the coulis.

Finalmente o verão! Claro que não oficialmente, mas eu já estava com saudades do sol e do calorzinho. Esse final de semana não tive aula então aproveitei pra fazer o Daring Bakers. Súper em cima da hora, já que hoje é o último dia!
Quem tá curtindo o tempo bom também são meus bichinhos. Que estão aproveitando o sol pra ficar no jardim!



Esse mês a Simona do Briciole nos desafiou a fazer crostata.
Crostata é uma espécie de torta que pode ser recheada com futas, geléia ou creme de confeiteiro.
Eu resolvi juntar tudo e recheei minha crostata com creme de confeiteiro e um coulis de morangos, que é uma geléia, um pouco mais mole, no ponto de calda.
Eu adorei o resultado, principalmente a massa. Vou guardar a receita pra muitas outras tortas.

Ingredientes:

100g açúcar
235g farinha de trigo
uma pitada de sal
115g manteiga
1 colher de chá de açúcar de baunilha
1 ovo e uma gema batidos



Misture a farinha, o açúcar e o açúcar de baunilha. Junte a manteiga picada e faça uma farofa. Junte os ovos e amasse até que vire uma massa homogênea. Forme uma bola, cubra com filme e leve à geladeira por pelo menos duas horas. Eu deixei da noite pro dia.
Abra a massa com um rolo sobre uma superfície enfarinhada. Forre uma fôrma de fundo falso com a massa. Eu usei 15 mini forminhas e duas médias.
Leve ao fôrno pré-aquecido a 190º por 20 a 25 minutos, ou até que as bordas dourem. Se usar forminhas médias ou grandes cubra a massa com papel alumínio e coloque grãos de feijão cru para que a massa não forme bolhas enquanto assa. Asse por 15 minutos com o papel alumínio, retire o papel e asse por mais 10 minutos, ou até queas bordas fiquem levemente douradas.

Crème Patissiere (creme de confeiteiro)
225ml de leite integral
2 colheres de sopa de amido de milho
100g de açúcar
1 ovo e 2 gemas
30g de manteiga
1 colher de sopa de baunilha

Dissolva o amido de milho em 1/4 do leite.
Combine o restante do leite com o açúcar em uma panela e leve ao fogo até ferver.
Bata o ovo com as gemas e adicione à mistura de leite e amido de milho. Faça a temperagem misturando 1/3 da mistura de leite fervido à mistura de ovos (para que os ovos não cozinhem). Adicione o restante da mistura dos ovos ao leite fervendo e leve ao fogo baixo, mexendo sempre, até que a mistura ferva e engrosse.
Retire do fogo e misture a manteiga e a baunilha. Deixe esfriar.

Coulis de Morango

160g de morangos
160g de açúcar
Suco de meio limão

Derreta o açúcar numa panela, adicione o limão e os morangos.
Amasse os morangos, abaixe o fogo e deixe reduzir por 10 a 15 minutos.
Deixe esfriar.

Montagem:

Recheia a torta com creme de confeiteiro e por cima coloque o coulis de morango.

Sirva gelado.

Daring Baker's Challenge - Doughnuts!

This month Daring Baker’s challenged us to make doughnuts, that treat eaten by the Police guys on movies.
We could make doughnuts or any other shapes like bomboloni that in Brazil is known like “sonho” (dream).
What I most like in DB is that always challenge me to make a recipe that I’ve never thought I could do.
I confess I was a little afraid of frying, but it was so easy! And didn’t make much mess!
After all, I had a lot of fun, as always at DB Challenge! And everybody at home liked the “sonhos”!



Yeast Doughnuts:

Preparation time:
Hands on prep time - 25 minutes
Rising time - 1.5 hours total
Cooking time - 12 minutes
Yield: 20 to 25 doughnuts & 20 to 25 doughnut holes, depending on size
Ingredients
Milk 1.5 cup / 360 ml
Vegetable Shortening 1/3 cup / 80 ml / 70 gm / 2.5 oz (can substitute butter, margarine or lard)
Active Dry Yeast 4.5 teaspoon (2 pkgs.) / 22.5 ml / 14 gm / ½ oz
Warm Water 1/3 cup / 80 ml (95°F to 105°F / 35°C to 41°C)
Eggs, Large, beaten 2
White Granulated Sugar ¼ cup / 60 ml / 55 gm / 2 oz
Table Salt 1.5 teaspoon / 7.5 ml / 9 gm / 1/3 oz
Nutmeg, grated 1 tsp. / 5 ml / 6 gm / ¼ oz
All Purpose Flour 4 2/3 cup / 1,120 ml / 650 gm / 23 oz + extra for dusting surface
Canola Oil DEPENDS on size of vessel you are frying in – you want THREE (3) inches of oil (can substitute any flavorless oil used for frying)

Directions:



Place the milk in a medium saucepan and heat over medium heat just until warm enough to melt the shortening. (Make sure the shortening is melted so that it incorporates well into the batter.)
Place the shortening in a bowl and pour warmed milk over. Set aside.
In a small bowl, sprinkle the yeast over the warm water and let dissolve for 5 minutes. It should get foamy. After 5 minutes, pour the yeast mixture into the large bowl of a stand mixer and add the milk and shortening mixture, first making sure the milk and shortening mixture has cooled to lukewarm.
Add the eggs, sugar, salt, nutmeg, and half of the flour. Using the paddle attachment of your mixer (if you have one), combine the ingredients on low speed until flour is incorporated and then turn the speed up to medium and beat until well combined.
Add the remaining flour, combining on low speed at first, and then increase the speed to medium and beat well.
Change to the dough hook attachment of the mixer and beat on medium speed until the dough pulls away from the bowl and becomes smooth, approximately 3 to 4 minutes (for me this only took about two minutes). If you do not have a dough hook/stand mixer – knead until the dough is smooth and not sticky.
Transfer to a well-oiled bowl, cover, and let rise for 1 hour or until doubled in size.
On a well-floured surface, roll out dough to 3/8-inch (9 mm)thick. (Make sure the surface really is well-floured otherwise your doughnuts will stick to the counter).
Cut out dough using a 2 1/2-inch (65 mm) doughnut cutter or pastry ring or drinking glass and using a 7/8-inch (22 mm) ring for the center whole. Set on floured baking sheet, cover lightly with a tea towel, and let rise for 30 minutes.
Preheat the oil in a deep fryer or Dutch oven to 365 °F/185°C.
Gently place the doughnuts into the oil, 3 to 4 at a time. Cook for 1 minute per side or until golden brown (my doughnuts only took about 30 seconds on each side at this temperature).
Transfer to a cooling rack placed in baking pan. Allow to cool for 15 to 20 minutes prior to glazing, if desired.

I made bombolonis, or "sonhos" using a round cookie cutter.
I filled them with dulce de leche, using a pastry tip and bag.
