Cinnamon dry figs biscotti

This Monday it´s the final post of Merry Mondays! It was a pleasure to participate! Thank’s Claire and Taylor for the opportunity of learning new recipes and knowing new amazing blogs!

This Monday the challenge was to make a cinnamon recipe. I prepared this cinnamon dry figs biscotti that I adapted from here.This is so good and perfect for Christmas! The cinnamon and orange smelling all around the kitchen and the dry fruit gives a Christmas touch. And is wonderful with a cup of coffee!



I’ve made my Christmas baking last Thursday and at afternoon of Christmas Eve we set a beautiful table with all the goodies and had coffee at backyard! Surely we created a new Christmas tradition at my home!
Ingredients:
¾ cup sugar
2 cups all-purpose flour
3 eggs
1 ½ ts baking powder
2 oranges zest
250g chopped dry figs
1 ts cinnamon

Pre-heat the oven at 350ºF. In a bowl, combine sugar, flour, cinnamon and baking powder. Set aside. In another bowl mix the eggs and the orange zest. Add the dry ingredients mixture. Add chopped dry figs. Flour the table and separate the dough in two halves. Butter and flour a pan, put the 2 halves of dough and smash the top. Bake for 30-35 minutes. Remove from the oven, and let it cool. Slice in ½ inch thick pieces. Bake for 15 minutes each side.

Último Merry Monday!!! Nem preciso dizer que adorei participar! Obrigada Claire e Taylor! Foi uma ótima oportunidade de conhecer novas receitas e blogs deliciosos!
Nesta segunda, o desafio é postar uma receita feita com canela.
Eu preparei um Biscotti de figo seco e canela que eu adaptei daqui.

É uma delícia e perfeito pro Natal. O aroma da laranja e da canela invadem a cozinha e o figo seco dá um toque natalino.
E fica ótimo com café!!!



Dia 23 eu passei a tarde na cozinha fazendo doces para o Natal. Fiz o Stollen, cookies de chocolate com amêndoas e esses biscottis. Na véspera de Natal arrumamos uma mesa linda com todas os doces e tomamos café no jardim! Foi muito bom e com certeza uma nova tradição de Natal!

Ingredientes:

3/4 xícara de açúcar
2 xícaras de farinha
3 ovos
1 1/2 colher (chá) de fermento em pó
raspas de duas laranja
250 g de figos secos cortado em cubinhos
1 colher de chá de canela em pó

Modo de Fazer:

Pré-aqueça o forno a 180ºC. Em uma tigela, combine o açúcar, a canela, a farinha e o fermento em pó. Em outra tigela, misture os ovos e as raspas de laranja. Despeje a mistura de ovos sobre a mistura seca de farinhas. Misture até ficar homogêneo. Adicione os figos picados. Em uma superfície enfarinhada, despeje a massa e divida em duas partes. Modele cada porção de massa em formato levemente achatado e retangular e disponha na assadeira com uma boa distância para não grudarem . Leve ao forno por cerca de 30-35 minutos. Remova do forno e deixe amornar. Corte fatias de cerca de 1 cm e disponha as fatias lado a lado na assadeira e leve ao forno por mais 15-20 minutos, virando do outro lado no meio do tempo de forno.

12 Weeks of Christmas Cookies/ Merry Mondays - Star Chocolate Fudge

I can’t believe that we are already at the last week of 12 Weeks of Christmas Cookies!
I’m happy that I knew all off you and learned new treats recipes! I’ll miss you all!
There’s only five days until Christmas and I want to bake a lot of goodies!!!
But I’m very busy and as tomorrow is Merry Mondays post day too, which theme is fudge, I decided to make a fudge for both: 12 Weeks and for Merry Mondays.

Ingredients
3 cups semisweet- or milk-chocolate chips
1 can sweetened condensed milk
1/8 teaspoon salt
1 teaspoon vanilla extract
2 cup compound chocolate



Place the chocolate chips in a 2-quart bowl and microwave for 1 minute, then stir them with a wooden spoon. If the chips are not completely melted, microwave them again for 30 seconds, then stir until they're smooth.

Stir in the condensed milk, salt, and vanilla extract.

Line a 9-inch square pan with aluminum foil, extending it about 2 inches beyond each side. (This makes it easy to remove the fudge later.) Lightly spray the foil with nonstick cooking spray.

Spread the mixture evenly in the pan.

Chill the candy until firm, about 30 minutes in the freezer or 1 hour in the refrigerator.

Lift the foil from the pan and place it on a flat work area. Use 1-inch star cookie cutters to cut out the fudge, set aside.

Melt the chocolate and dip the stars and let dry.

Nem acredito que já estamos na 12ª semana do “12 Weeks of Christmas Cookies”. O tempo realmente voou!!!
Faltam só 5 dias para o Natal e agora só resta a vontade de fazer muitas coisas gostosas!
Mas ainda estou um pouco sem tempo, então como amanhã é dia de Merry Mondays e o tema desta semana é fudge, resolvi unir o útil ao agradável e fazer uma receita pro 12 Weeks e pro Merry Mondays.
Fudge é um doce típico americano, e é bem parecido com o nosso brigadeiro, só que mais durinho.
É super fácil de fazer e eu fiz em formato de estrelinha, pra ficar com cara de Natal.

Vamos à receita:

4 xícaras de chocolate meio amargo
1 lata de leite condensado
1 pitada de sal
1 colher de chá de aroma de baunilha
300g de chocolate fracionado de boa qualidade para banhar



Derreta o chocolate em banho-maria ou no microondas em potência média, mexendo a cada 30 segundos até derreter.
Misture o leite condensado, o sal e a baunilha.
Forre um marinex de 40cm por 25cm, aproximadamente, com papel manteiga e unte com óleo de milho. Despeje a massa e leve à geladeira por no mínimo 1 hora.
Solte a massa do papel manteiga e corte com cortador de estrelinha ou no formato que preferir.
Derreta o chocolate fracionado em banho-maria ou no microondas em potência média, mexendo a cada 30 segundos até derreter.
Banhe as estrelinhas no chocolate e deixe secar em cima de uma folha de papel manteiga.

Merry Mondays - Mint Truffle Tower

This week the main ingredient for Merry Mondays is mint.
So I decided to make mint chocolate truffle tower.
It’s so beautiful! It’s perfect for Christmas dessert table!

Ingrediets:

650g milk chocolate
650g semi sweet chocolate
300g heavy cream
50ml mint liquor
30g butter
30g honey
Cocoa powder to roll.



Melt chocolate. Add heavy cream, mix well. Add butter, liquor and honey mix until incorporate. Let it cool out of fridge for at least 2 hours.
Roll the truffles in 20g small balls. Roll the balls on cocoa powder.
Assemble the tour:
Brit cone
Paper or fabric
Toothpicks
Roll the fabric on cone. Pass the toothpicks trough the cone. Spit the truffles on toothpicks.

Merry Mondays - Torre de Trufas de Menta.

Essa semana o ingrediente principal do Merry Mondays é menta.
Como tinha visto esse post e estava super afim de fazer torre de trufas, resolvi unir o útil ao agradável e fazer trufas de menta e montar a minha torre.
É perfeita pra mesa de Natal!

Ingredientes:

650g chocolate ao leite
650g chocolate meio-amargo
300g creme de leite
50ml de licor de menta
30g manteiga em temperatura ambiente
30g mel



Quanto baste de cacau em pó para enrolar
Derreta o chocolate no microondas, em potência média de 30 em 30 segundos, mexendo sempre até derreter, ou no fogão em banho-maria.
Acrescente o creme de leite e mexa até incorporar. Adicione a manteiga, o mel e o licor e mexendo bem.
Deixe esfriar fora da geladeira, por pelo menos 2 horas. Faça bolinhas de 20g cada. Passe no cacau. Enrole de novo se quiser que fique mais redondinho e passe no cacau em pó.
Montagem
Cone de isopor
Papel chumbo ou tecido para enrolar
Palitos
Enrole o papel chumbo no cone de isopor e cole as pontas. Fure o cone com palitos e vá espetando as trufas, uma ao lado da outra.

Merry Mondays - Cramberry Syrup Cake Roll

Christmas is already there in the corner, and I’m participating in another Holidays Challenge!
Merry Mondays is hosted by Taylor, from Greens and Chocolate and Claire, from Claire Cooks.
It will be a series of posts for the next four weeks that include one of chosen holiday ingredients!



This Monday the ingredient is Cramberry. As I didn’t find cramberris here (I don’t know if we have it in Brazil (rasperries, blueberris we have, but cramberris...)
But I have a cramberry syrup that I bought to make “cosmopolitan” and Taylor said it was ok to use it in a recipe.
So, I made this cramberry cake roll. With cramberry syrup in the filling and to serve.



For the sponge cake:

4 eggs
200g sugar
200g all purpose flour

Beat the eggs until they become fluffy and light yellow. Add the suggar and beat well. Sift the flour and add to egg mixture, folding in carefully.
Pour batter into waxed paper-lined roll pan. Bake at 375° for 20 minutes or untill light gold in the edges. Sprinkle with confectioners' sugar. Turn onto a clean kitchen towel which has been generously dusted with confectioners' sugar. Trim edges, if necessary; roll cake up, towel and all, while still warm. Let cool completely. Unroll, brush the sugar syrup and fill with the filling cream then re-roll cake.



For the filling

150g cream cheese – softened
200g whipping cream
2 Ts sugar
75ml cramberry syrup
1 lemon zest

Mix cream cheese, syrup and zest. Set aside. Beat cream and sugar until stiff peaks form. Add the cream cheese misture to beatten whipping cream.

To sugar syrup

150ml water
100g sugar
50ml rum

Mix water and sugar in a pan and let it boil for 10 minutes. Add the rum and let is simmer for more few minutes. Set aside.

Merry Mondays - Rocambole

Natal tá chegando e com ele mais um desafio! É o Merry Mondays, organizado pela Taylor do e pela Greens and Chocolate e pela Claire do Claire Cooks . São quatro semanas onde os participantes terão que postar uma receita usando um determinado ingrediente.



Nesta primeira semana o ingrediente era Cramberries. Como não achei aqui (nem sei se tem), usei cramberry syrup no recheio e cobertura deste rocambole.
Vamos à receita.



Para o pão-de-ló:

4 ovos
200g açúcar
200g farinha de trigo
Açúcar de confeiteiro para polvilhar.

Bata os ovos até dobrarem de volume e ficarem esbranquiçados. Acrescente o açúcar e bata mais um pouco. Retire da batedeira e vá adicionando a farinha de trigo peneirada aos poiucos. Mexendo de baixo para cima, bem de leve.
Despeje a massa em uma assadeira de 30 x40cm aproximadamente, forrada com papel manteiga e untada.
Leve para assar em forno pré-aquecido a 180°C, por 20 minutos, ou até que as bordinhas estejam levemente douradas. Deixe esfriar.

Para o recheio:

150g de cream cheese
200g creme de leite batido
2 colheres de sopa de açúcar
75ml de xarope de cramberry (eu usei da Monin – encontra-se em casas que vendem produtos para confeitaria, para cafés, etc)
Raspas de 1 limão.

Misture o cream cheese com o xarope e as raspas de limão. Reserve.
Bata o creme de leite em picos firmes (o creme de leite deve estar gelado) e adicione o açúcar.
Misture levemente o creme de leite à mistura de cream cheese.



Para a calda:

150ml de água
100g de açúcar
50 ml de rum (eu usei rum flavorizado de franboesa)

Misture a água e o açúcar e deixe ferver por 10 minutos. Misture o rum, deixe ferver mais um pouquinho e desligue o fogo.

Montagem:

Retire o pão-de-ló da forma ainda morno e puxe o papel manteiga.
Polvilhe com açúcar de confeiteiro.
Coloque o pão-de-ló sobre um pano de prato já polvilhado com açúcar de confeiteiro.
Enrole o pão-de-lo no pano de prato até que esfrie.
Desenrole, regue o pão-de-ló com a calda e espalhe o recheio sobre a massa, deixando 1cm de borda.
Enrole o pão de ló com o recheio e disponha sobre a travessa que vai servi-lo.
Polvilhe açúcar de confeiteiro por cima.
Sirva com xarope de cramberry.
