Berries Tiramissu

I’m sorry I didn’t post on the last 10 days! I just came back from vacation and it is a little hard to come back to the normal life!
My vacation was very nice, but we always want more, don’t we?



Since in Brazil it is summertime, I went to the beach, rested and ate a lot! I didn’t cook very much, but I’m lucky that I have a dessert left from the Christmas meeting that I made for my friends!
This is a delicious version of tiramissu, that is awesome for Summer, because we use berries instead of coffe and chocolate. I used raspberries, strawberries and some cherries on top!

Ingredientes:
6 egg yolks
200g suggar
200ml water
300g mascarpone cheese (I used cream cheese)
250g heavy cream
1 lemon zest
1 box lady finger cookies
300ml raspberry juice (or strawberry, or grape)
50ml peach liqueur

How to:
Mix sugar and water and let simmer in a pan, without stirring, until syrup consistency.
Beat the egg yolks for 10 minutes. Add the warm sugar syrup to yolks and continue beatting until smooth. Set aside.
Place mascarpone cheese in mixing bowl and paddle on low speed until there are no lumps. Add to egg yolk cream.
Whip the heavy cream with the sugar until soft peak form. Fold the cream mixture into the mascarpone mixture until well combined.
To assemble, pipe or spoon 1/3 of the cream in the bottom of a glass container. Mix the juice and liqueur in a bowl. Quickly dip both sides of the ladyfingers in the juice mixture (just long enough to moisten the cookies without making them soggy) and place them on top of the cream. Pipe 1/3 of the cream on top of the cookies. Dip the remaining cookies and place on top of the cream. Lastly pipe the remaining cream and top with berries coulis. Refrigerate for at least six hours. Decorate with cherries.

Ingredients:
120g strawberries
120g raspberries
240g sugar
1/2 lemon juice
